Andrés Guaca Purple Bourbon

Produced by Andrés Guaca, cherries from this microlot are picked following a strict ripeness criteria then are transported to Garzón, Huila. They are then exposed to a 12 hours dry fermentation process. Afterwards, the cherries are floated and hand sorted to be later placed on parabolic dryers to ideal moisture content. This varietal is a mutation of Bourbon where the cherries turn purple when ripe and the cup profile is more floral than other Bourbons.
