Produced by Jairo Arcila. For this microlot, cherries were strictly picked with the same level of ripeness and exposed to a dry anaerobic fermentation of 16 hours. They are then dried in a controlled environment at 35 degrees celcius. Jairo’s farm is located in Armenia, Quindio. This varietal was developed by the Colombian Coffee Federation. It is resistant to leaf rust and produces high yield. The Castillo varietal is a hybrid between Caturra and Timor.
